Legend states that this starter could be over a thousand years old, being in continual use since the monastery was first built. It is light and has a complex and delicate sourness profile. We feed this starter Italian all natural Polselli Classica 00 soft wheat Flour.
Purchasing a wet starter will allow you to activate it much faster than purchasing a dehydrated starter. You will still need to activate it with 24-hour feedings for a few days on the counter.
What you get is:
1. 92 grams + active Fresh (Not Dried) Sourdough Starter in double Ziplock bags placed in a 3rd bag that allows air to escape. 1/4" vent hole releases any air or moisture present in bag. Spot-welded zipper creates strong stress point support but slightly narrows the bag opening. Meets FDA and USDA specifications for food contact.
Measure out 92 grams starter when feeding and discard the rest.
